ام علي… صانعة التنانير التي تكره المطر وتجيد التفاوض مع البلدية

تتفحص ام علي السماء للتعرف على أجواء الطقس فجرا كي تقرر ما ترتديه من ملابس ثم تصنع الشاي على عجل، وتتناول معه بعض الخبز والبيض الذي جادت به دجاجاتها التي تربيها في المنزل ثم تنطلق الى سوق التنانير في منطقة “المطيحة” في البصرة لتكسب قوتها.

المرأة الستينية تسير ببطء فألم مفاصلها يعيقها أثناء المشي، لكنها مازالت تصنع تنانير الخبز من الطين الحر، فهي لم تترك مهنتها التي بدأت العمل بها منذ أكثر من عشرين عاماً مضت.

تقول ام علي “اشعر بسعادة كبيرة عندما انهي عمل التنور ويكون جاهزا للبيع، وغالباً ما تزورنا في السوق عائلات من خارج البصرة لالتقاط الصور التذكارية وتقديم بعض الدعم لنا، فصناعة التنانير الطينية موروث شعبي يعود الى زمن السومريين”.

نشر الطين الحر الذي يتميز بلونه الأحمر هو أول عمل تقوم به المرأة الكادحة وهو يصل الى السوق من قضاء الهارثة شمال البصرة ، ثم تمزجه مع نشارة الخشب الذي تقوم بجمعه من النجارين وتصنع منهما خميرة تضيف اليها الماء، وبعد يومين تكتمل العجينة المخمرة وتستعد ام علي لبناء التنور.

مزج العجينة المخمرة امر متعب لسيدة في سنها فهي غالبا ما تقوم بعجن المكونات بيدها دون ان ترتدي القفازات، وفي صباحات البرد الشديد تشعر بعروقها تتجمد اثناء العمل لكنها تواصل العمل رغم ارتجاف يدها “لدي عائلة اعيلها ويجب ان استمر حتى لو كان الجو قاسيا” تقول بإصرار.

القاعدة الأساسية للتنور هي اول ما تبنيه ام علي وتهتم به مثلما يهتم المهندس بأساس بناية يشيدها ثم تنتظر لساعات حتى تجف قليلا، فتضع كتلة أخرى من خميرة الطين لتزيد ارتفاع القاعدة قليلا وتسميه بلغة صانعات التنانير “الطوف الاول” ثم تضيف كتلا طينيا أخرى كل بضعة ساعات حتى يرتفع التنور وتنهي عملها بوضع آخر “طوف” وغالبا ما يكون الأضيق بين سابقاته.

ولأن مرحلة صناعة التنور الواحد تستمر أحيانا ليومين كاملين تضع صانعات التنانير اكثر من قاعدة واحدة في اليوم لذا تتمكن من انجاز مجموعة من التنانير دفعة واحدة، ويصنعنها بحسب طلب الزبون، فهناك أناس يفضلون التنور الكبير وآخرين يفضلون الصغير “كل امرأة لها ذوقها في التنور الذي تصنع فيه خبز عائلتها فاذا كانت تصنع خبزا كبيرا تفضل التنور الكبير وبالعكس” تقول واصفة أسباب التباين في الاذواق.


عند بناء التنور تربط ام علي منتصفه بحزام من قماش تحسبا لاي تشققات محتملة تحصل في البناء، وفي بعض الاحيان يحدث شق صغير، تقوم بترميمه وربطه من جديد لكي يتماسك الطين مع بعضه ويكون بنيانا مرصوصا إذ يرفض الزبائن شراء تنور متشقق لأنه ينهار بعد بضعة شهور.

تشارك ام علي زميلاتها في بعض الاحيان في اعمالهن لخبرتها المتراكمة في معالجة الشقوق المفاجئة في التنور، إذ تقوم بعمل توازن لقاعدة التنور وشد وسطه بأشرطة من قماش لتتم عملية اعادة ضبط شكل التنور.

المطر هو اكثر الأشياء التي تخشاها ام علي وزميلاتها من صانعات التنانير، فزخات قليلة من المطر تستمر لساعة كفيلة بتهديمها وإعادتها طينا كما كانت، تطلع السيدة المسنة على عملها التي هدمته سرعة الرياح والعواصف والامطار في احد الأيام فتشعر بالحزن.

زبون مفاجئ يأتي للشراء ويعوض كل ما حدث، كان المبلغ جيدا عوضها دموعها على تهدم التنانير، هذا الزبون لديه الكثير من الضيوف الذين يأتون الى مزرعته لذا اقتنى من ام علي تنانير عدة ودفع لها دون تذمر.

تنور الطين لا يقترن اسمه بزمن معين بل يمتد وجوده على مدى العصور والازمنة السابقة، لكن صناعته في البصرة امتدادا الى الاجداد من العصر السومري وغيره من العصور والحضارات، ويستعمل في شواء اطباق الاسماك المختلفة البحرية والنهرية، وبعض الناس يفضلون التنور الطين على غيره بسبب نكهة الخبز المميزة برائحة الحطب.

في وقت ذروة العمل تواصل ام علي عملها الشاق بين حسرة وتعب وعرق يتصبب من جبينها بسرعة رغم الشتاء، يقف على رأسها مسؤول عن ازالة التجاوزات بشكل مفاجئ، ويطالبها بضرورة تفريغ المكان وعدم عرض التنانير وسط الشارع، والا ستخسر كل جهدها بإزالتها من قبل البلدية، فتبدأ ام علي بالتفاوض معه متوسلة تركها تكسب رزقها، وخبرتها في التفاوض جعلتها تتخطى تنمر المسؤول ،وتبقى تواصل بناء التنانير وبيعها.

الغيوم تملئ سماء المنطقة بعد صلاة الفجر وام علي في حالة ترقب شديد لوضع الطقس احضرت حذائها البلاستيكي السميك وارتدت جواربها قبل ان تعيد النظر الى السماء وهي تقول “ربي لا تمطرها”.
